I was surprised at how easy and amazingly delicious this recipe was. It’s a great, simple and quick meal for anyone following a plant-based diet or anyone who likes quinoa and wants to be healthy. Most of the ingredients are easy to find in most countries, and a lot can be swapped out for others. If you like nuts, feel free to add pine nuts to the pesto, it also works fine without though. Tastes great with a chunky salad on the side (carrots, tomato’s, basil, cucumber, radish etc.) Enjoy!
- 1 cup of white quinoa, rinsed and drained
- 2 cups of water
- 1 tablespoon of vegetable broth (optional)
- 1 or 2 red/green peppers
- 3 cups fresh basil and sweetbush leaves
- 2 cloves of garlic (or more, to taste)
- A generous pinch of salt
- A lemon (for the juice)
- 2 tablespoons of olive oil
To make the quinoa: boil the rinsed quinoa with two cups of water (and if you want, add the spoon of vegetable broth). Bring to the boil then reduce the heat and leave to cook until all the liquid has been absorbed. Around 25 mins.
To make the basil pesto: blend the leaves with the peppers, garlic, olive oil, lemon juice and salt.
When the quinoa is ready, put it into a bowl and pour the basil pesto on top, garnish with a leaf.
